Stave Char Reference

The four standard char levels each recipe cross-references — burn time, depth, look, and what it does to flavor.

Light - Char #1

~15 seconds · ~1 mm (1/32 in)

Thin, light carbon layer on surface. Wood grain remains clearly visible under slight darkening without deep cracking.

Mild carbon layer. Preserves raw wood extractives and oak lactones while providing subtle vanilla and minimal smoke.

Medium - Char #2

~30 seconds · ~1.5–2 mm (1/16 in)

Moderate carbonization. Surface is solid black with fine hairline cracking and light surface checking.

Balanced oak profile. Releases toasted wood sugars, light caramel, and vanillin while offering moderate sulfur filtration.

Medium Heavy - Char #3

~35–45 seconds · ~2–3 mm (3/32 in)

Deep carbonization. Distinct 'alligator skin' pattern with medium square scales and prominent cracking across stave surface.

Standard for bourbon. Strong caramelization of hemicellulose, deep spice, and significant active carbon filtration for harsh distillates.

Heavy - Char #4

~55–60 seconds · ~3–4+ mm (1/8+ in)

Thick, heavily cracked carbon layer resembling deep alligator hide ('Alligator Char'). Surface crust breaks easily.

Maximum carbon filtration (absorbs sulfur & off-notes). High smoke, roasted coffee, dark chocolate, and heavy toast; degrades delicate lactones.

Cask Finishes

Sherry, port and rum character work differently from the woods above — they come from the liquid a barrel last held, not from toasting the wood. Here’s how to get them at home.

Two ways wood flavors a spirit

1Pyrolysis (the periodic table). Heat breaks down the wood itself — vanillin, oak lactones, caramel furans, smoky guaiacol. The flavor comes 100% from the wood you toast and char.
2Residue (a cask finish). A used barrel’s staves are soaked with the wine, sherry or rum they last held — sugars, polyphenols, color and esters. That is what a “sherry finish” mostly is.
💡The catch for home aging: a fresh toasted stave has no residue to give. To get a cask finish you have to supply it — soak your own oak in the real liquid, buy pre-soaked oak, or dose a little of the actual wine/rum. Each card below shows how.

Sherry (Oloroso / PX)

Well-grounded

Dried fruit (raisin, fig, date), walnut, caramelized sugar and nutty rancio. PX pushes heavy raisin and molasses sweetness.

How to do it at home
  1. Soak your own toasted oak in real Oloroso or PX sherry for a few days to a few weeks, air-dry it, then add it to your spirit.
  2. Or buy pre-soaked oak — some cooperages and hobby sellers offer sherry/wine-soaked staves.
  3. Simplest: dose a small, measured amount of actual sherry into the spirit alongside your normal oak, and taste up.
What’s actually happening: The “sherry bomb” character is mostly the residual sherry soaked ~2–5 mm into the wood — glycerol, hydroxycinnamic acids, organic-acid ethyl esters, wine polyphenols and residual sugars — not wood pyrolysis. A fresh toasted stave can’t produce it alone.

Port / Red Wine

Well-grounded

Port → red-berry jam, plum, raisin, sweet spice and a rosy tint. Dry red wine → blackcurrant, dried cherry and a dry, tannic grip.

How to do it at home
  1. Soak toasted oak in ruby/tawny port or a tannic red, dry it, then add — the most common hobbyist route.
  2. Or buy wine/port-soaked oak staves or spirals.
  3. Or dose a splash of the actual port/wine into the spirit.
What’s actually happening: Residual grape sugars, anthocyanins (the color transfer is the giveaway) and grape tannins absorbed into the wood — wine residue, not toast chemistry.

Rum

Optional / subtle

Molasses, brown sugar, a tropical banana ester, light baking spice and added roundness.

How to do it at home
  1. Buy rum-soaked oak (e.g. The Barrel Mill’s soaked spirals include rum), or
  2. soak toasted oak in a dark/molasses rum, dry, then add, or
  3. dose a little dark rum into the spirit.
What’s actually happening: A thinner residue than fortified wine — molasses sugars plus fermentation esters over the underlying oak. Subtle, and it overlaps with the caramel/brown-sugar notes a heavy char already gives you.
🍺Why no beer/stout finish? Beer/stout finishing is left out on purpose. In the real world the flow is reversed — stout is aged in used whiskey barrels, then whiskey goes back into the stout-seasoned barrel. Beer is low-alcohol and low-sugar, so it leaves almost no residue in wood, and no one sells stout-soaked staves — it’s the hardest finish to replicate at home.
